The Ancient Aztec diet consisted mostly of corn, corn tortillas, tamales, and a wide variety of chilies. The name tortilla came from the Spanish conquistadors. They were orginally called "tlaxcalli" by the Aztecs. Corn tortillas are made by first soaking the corn in water and lime so that the skin can be removed. Next, a small golf ball sized piece is patted into a thin round pancake shape. The Ancient Mayan diet, and the Ancient Aztec were very similar.
